Frozen poultry meat is the most widely consumed animal-based food. However, water loss often leads to quality loss of poultry meat. Therefore, the present study sought to investigate the combined effect of calcium chloride (CaCl2) and pulsed electric fields (PEF) treatment on chicken breast meats and the mechanisms underlying protein degradation. The results showed that the synergistic effect was superior to the single treatment. Compared with the untreated group, the combination of CaCl2 and PEF increased water holding capacity of chicken breast meats by 16.61% and decreased cooking loss by 28.93%. Low-field nuclear magnetic resonance (LF-NMR) results indicated that the synergistic treatment promoted water molecules' binding capacity in myofibrils of poultry meat, which exhibited higher immobilised water. Additionally, the combination of CaCl2 and PEF led to increased degradation of proteins of high-molecular weight and surface hydrophobicity of myofibrillar protein. Furthermore, the extension of the protein molecule and microenvironmental changes promoted interaction between protein and water. In conclusion, the synergistic treatment of CaCl2 and PEF enhanced water retention and improved physicochemical properties of the myofibrillar protein in chicken breast meats. 相似文献

A novel additive manufacturing method with TIG–MIG hybrid heat source was applied for fabricating 5356 aluminum alloy component. In this paper the microstructure evolution, mechanical properties and fracture morphologies of both as-deposited and heat-treated component were investigated, and how these were affected by different heat-treated temperature. The as-deposited microstructure showed dominant equiaxed grains with second phase, and the size of them is coarse in the bottom region, medium in the middle region and fine in the top region owing to different thermal cycling conditions. Compared with as-deposited microstructure, the size of grain becomes large and second phases gradually dissolve in the matrix as heat-treated temperature increase. Different microstructures determine the mechanical properties of component. Results show that average ultimate tensile strength enhances from 226 to 270 MPa and average microhardness increases from 64.2 to 75.3 HV0.1 but ductility decreases from 33 to 6.5% with heat-treated temperature increasing. For all components, the tensile properties are almost the same in the vertical direction (Z) and horizontal direction (Y) due to equiaxed grains, which exhibits isotropy, and the mechanisms of these are analyzed in detailed. Hyperlipidemia is a common cardiovascular disease. At present, the influence of high fat diet (HFD) on this is being explored. Recently, vegetable oils rich in omega‐3 have been reported that can treat hyperlipidemia caused by HFD. However, the effects of chia seed oil (CSO) on HFD‐induced hyperlipidemia and oxidative stress are poorly studied. Hence, in this study, the effects of CSO on hyperlipidemia and oxidative stress induced by HFD in mice are analyzed by various commercial kits, section staining, and protein expression. The results show that CSO decreases body weight and organ index. Meanwhile, CSO reduces serum lipid levels of total cholesterol, triglyceride, and low‐density lipoprotein cholesterol. It can also elevate superoxide dismutase and glutathione peroxidase activities and reduce malondialdehyde content in serum and liver. The results of histopathological analysis prove that CSO improves hepatic steatosis and reduces lipid deposition. Further, the results of western blot demonstrate that CSO upregulates the expression of peroxisome proliferator‐activated receptor alpha and carnitine palmitoyltransferase 1a in the liver. As a result, CSO may be a potential lipid‐lowering oil to prevent and treat HFD‐induced hyperlipidemia and oxidative stress. Practical Applications CSO, as a byproduct of chia seed processing, is a rich source of α‐linolenic acid. This study investigates the effects of CSO on HFD‐induced hyperlipidemia and oxidative stress in mice. It is concluded that dietary CSO can improve the hyperlipidemia in HFD‐induced mice via analysis of lipid parameters, histopathology study of the liver, and lipid metabolism related genes. In addition, supplementation of CSO also can improve the oxidative stress in mice. Therefore, CSO can be used for the prevention of hyperlipidemia and oxidative stress. 新疆阿尔泰南缘北塔山组火山岩较为发育。本文对新疆阿尔泰南缘默色克奥依一带北塔山组火山岩进行地球化学分析和年代学研究。研究表明:U-Pb锆石年龄为(384.3±4.0Ma)Ma,为中泥盆世;该组火山岩属于钾质钙碱性系列,全碱(Na2O+K2O=2.07%-6.49%)和YiO2(0.24%-0.64%)含量较低,K2O含量(1.11%-4.04%)变化较大,稀土元素含量(∑REE)较低。稀土元素显示其轻稀土富集且分馏不明显;δEu值均大于1,为Eu富集型;δCe值均小于1,为Ce亏损型。该组火山岩微量元素P明显富集,K、Rb、Ba等大离子亲石元素(LILE)略富集,亏损Ta、Zr、Hf、Ti等高场强元素(HISF)。结合前人研究,本文认为默色克奥依一带北塔山组火山岩形成于岛弧及与俯冲过程有关的活动大陆边缘造山带环境,为泥盆纪古大洋俯冲消减过程中,俯冲板片脱水产生的流体交代上覆地幔楔部分熔融的产物。 相似文献

为了提升脑胶质瘤分割精度,提出一种结合注意力机制的3D卷积神经网络算法。输入3个不同尺度的图像块,经过9个卷积层和1个分类层后得到3个不同的分类结果,将分类结果与注意力学习到的权重相乘并逐体素相加得到输出。此外该算法采用了一种混合Dice损失函数与Focal损失函数的超参数损失函数。实验表明,该算法的Dice系数在整体区域、核心区域以及增强区域分别达到了95.31%、80.12%、82.25%。与已有的一种脑胶质瘤分割算法deepmedic相比,整体区域、核心区域以及增强区域的Dice系数分别提升了3%、2%、6%。在脑胶质瘤分割方面,具有重要的临床意义。 相似文献

针对连续查询位置服务中构造匿名区域未考虑语义位置信息导致敏感隐私泄露问题,通过设计[(K,θ)]-隐私模型,提出一种路网环境下面向连续查询的敏感语义位置隐私保护方案。该方案利用Voronoi图将城市路网预先划分为独立的Voronoi单元,依据用户的移动路径和移动速度,选择具有相似特性的其他[K-1]个用户,构建匿名用户集;利用匿名用户集用户设定的敏感语义位置类型和语义安全阈值,以及用户所处语义位置的Voronoi单元,构建满足[(K,θ)]-隐私模型的语义安全匿名区域,可以同时防止连续查询追踪攻击和语义推断攻击。实验结果表明,与SCPA算法相比,该方案在隐私保护程度上提升约15%,系统开销上降低约20%。 相似文献
